Anti-Inflammatory Sheet Pan Fajitas

Many families love taco night, but sometimes it’s nice to switch things up. That’s where sheet pan fajitas come in—an easy, healthy, and delicious dinner that all comes together on one pan. Less cleanup, less stress, and still something the whole family will enjoy. As a busy working mom of two teenagers, I really appreciate meals like this that are simple but still nourishing.

What I love most about this meal is how it combines protein and vegetables in one place. You don’t have to overthink it.

Let’s start with the vegetables. Bell peppers, red onion, and broccoli are staples in this recipe, and they each bring something powerful to the table. Bell peppers are packed with vitamin C and antioxidants that support immune health and help fight inflammation. Broccoli is a cruciferous vegetable that supports your body’s natural detoxification pathways and is also rich in fiber to support gut health. Red onion adds flavor and also is a prebiotic that also supports your gut.

Then you’ve got the protein. Chicken is a great lean protein that helps keep you full, supports muscle, and helps balance blood sugar. When you pair protein with fiber-rich vegetables, you get a meal that feels satisfying and keeps energy steady—something that makes a difference for both kids and adults.

One of the best parts about this recipe is the flexibility. I love using Siete brand organic tortillas because they’re gluten-free and grain-free, but you can use any tortillas or taco shells, or even serve everything over brown rice. If you want to keep things lighter, you can serve this over a bed of greens or warm cauliflower rice, and it’s just as delicious. I kept things simple and used my favorite fajita spice mix from Siete, but any fajita seasoning works—just choose what you enjoy and, when possible, go with organic ingredients.

Toppings make this fun. This is where you can really make it your own. Add shredded cabbage or spinach for extra fiber, avocado or guacamole for healthy fats, and fresh cilantro for flavor and an anti-inflammatory boost. The squeeze of fresh lime adds brightness and flavor. It’s a simple way to get more nutrients into your family’s meals without anyone feeling like they’re “eating healthy.”

This meal is one of those go-to dinners—simple, nourishing, and family-friendly. It proves that eating nourishing food doesn’t have to be complicated.

A quick note on cooking: I recommend using parchment paper on your sheet pan instead of aluminum foil. Parchment paper creates a non-stick surface, makes cleanup easy, and avoids aluminum from leaching into food. Aluminum isn’t needed by the body and can accumulate over time, so we prefer to limit exposure.

Servers: 4

  • 2 pounds boneless skinless chicken breasts, cut into thin slices
  • 1 red onion, sliced thin
  • 2 cups broccoli
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 8 tortillas (I prefer the Siete brand)
  • 1 fajita seasoning packet
  • 1 tablespoon avocado oil
  • 1 lime, juiced

Toppings (Optional)

  • Shredded cabbage or spinach
  • Avocado or guacamole
  • Fresh cilantro

Preheat oven to 375 degrees F. In a large bowl, mix the seasoning, avocado oil, and lime juice to create a marinade. Toss the chicken and vegetables until well coated. If you have time, let it marinate for up to 1 hour. If not, you can go straight to baking.

Spread everything onto a parchment-lined sheet pan and bake for 15 to 24 minutes, or until the chicken is fully cooked.

Serve in tortillas, over rice, or over greens, and add your favorite toppings. Add a squeeze of lime to each tortilla.
