Chef Daniel Boulud: Running on Pilates

Pilates and healthy, light breakfasts and lunches fuel Chef Daniel Boulud, who said he’s well-supported these days.

Twenty years ago, it was a different story: “I was doing much more by myself.” In addition, “When I can remember, I try to focus dinner 2/3 fish and 1/3 meat coupled with a lot of vegetables and not so much bread/pasta.”

Connecting to family is also important. “I have a ritual of speaking to my family (parents, siblings) back in France every Sunday. It is a nice moment to look forward to and I love connecting with them,” he said.
