Protein-Packed Chicken Spinach Bolognese for Busy Weeknights

As a integrative nutrition and wellness coach, I’m always helping clients build simple, high-protein meals they can prepare once and enjoy throughout the week. Spinach Bolognese is one of my go-to recipes because it’s comforting, nourishing, and versatile. As an Italian, I’ve always loved making homemade sauces, and this is one of my healthy twists on a classic.

I also believe every meal is an opportunity to add more vegetables, fiber, and phytonutrients, which is why I sneak plenty of spinach into the sauce. Feel free to double or even triple the spinach if you’d like an extra nutritional boost. It also freezes well!

Lean ground turkey or chicken provides high-quality protein to support lean muscle, metabolism, and healthy blood sugar balance. You can also substitute organic grass-fed ground beef for a richer flavor while still creating a nutrient-dense meal. Spinach is packed with folate, iron, magnesium, vitamin K, and antioxidants that support heart, bone, and immune health. Garlic, onions, carrots, and celery create the foundation of this classic Italian-inspired sauce while contributing fiber and beneficial plant compounds that help support overall wellness. Fresh basil adds a burst of flavor along with antioxidant-rich essential oils.

I recommend choosing a high-quality, seed oil-free marinara made with simple ingredients, or using your favorite homemade version. 

To lighten up, serve the Bolognese over heart of palm pasta, zucchini noodles, cauliflower rice, or a gluten-free or traditional pasta or rice. No matter how you enjoy it, this recipe is perfect for meal prep and freezes beautifully, making healthy eating much easier on busy days.
