Risk vs. Benefit: Constipation, Gout, Kidney Stones on Zero Carb | Carnivore MD

What explains the claimed anti-inflammatory effects of the carnivore diet? Is it time to revise long-held views on fiber, fat, and sugar?

Even without eating a pure carnivore diet, “eating more meat, not being afraid of the fat, and eating less of these harmful things will absolutely improve your health,” said physician and carnivore-diet champion Dr. Anthony Chaffee. 

On “Vital Signs,” Chaffee broaches some of the most common criticisms of the carnivore diet. As low-carb and ketogenic diets gain popularity, many people wonder whether going fully carnivore offers additional benefits or carries hidden risks.

Could a meat-heavy diet trigger kidney stones? Is red meat really responsible for gout, or are sugar and fructose bigger drivers? 

For decades, dietary guidelines have emphasized fruits, vegetables, and fiber for digestive health. Chaffee challenges that view, arguing that the science behind the “fiber hypothesis” is far less settled than many people believe.

Beyond the science, “Vital Signs” host Brendon Fallon raises practical concerns many viewers share, including how cutting fiber will impact digestion, how to tolerate a high-fat diet, and how the gut microbiome responds to dramatic dietary shifts.

At the center of the discussion is a larger question: Are many modern health problems driven by what we eat, or by what we’ve added to our food? As Chaffee puts it, “Humans are the only animal smart enough to make our own food—and the only ones dumb enough to eat it.”
