Perfect Steel-Cut Oats (Recipe + Video)

Exceptionally creamy and delicious, steel-cut oats are a great way to change up your morning oatmeal routine. Oats are rich in many of the B vitamins that work to reduce inflammation in the brain, potentially preserving your memory. Besides, oats are naturally gluten-free, are low in fat, high in protein and have soluble fiber that keeps your gut bacteria happy and your cholesterol down.

Plus, blueberries, and walnuts are among the best brain foods. The buttery texture of walnuts combined with tart blueberries are great additions to the oatmeal.

Recipe

Prep Time: 5 minutes
Cooking Time: 25 minutes
Total Time: 30 minutes
Makes 4 servings

Ingredients

For oatmeal
2 ½ cup Water
2 ½ cup Whole milk
1/4 tsp. Fine salt
1 tsp. Cinnamon
1/4 cup Maple syrup
1 cup Steel cut oats

Topping
1 cup Blueberries
1/2 cup Toasted walnuts

Directions

  1. In a medium saucepan, combine water, milk, cinnamon, salt, and maple syrup. Bring to a simmer, add steel-cut oats, then cover and turn the heat down to low. Stir often with a rubber spatula, the oats will want to stick on the bottom of the pan. After 20 minutes, check to see if oats are cooked.
  2. Oatmeal will thicken as it sits; thin with milk as needed. Garnish with blueberries and toasted walnuts.
