Dessert in a glass. I recommend green-weary kids give this one a go before jumping into something less sweet.
Ingredients
- 2 green apples
- 2 cups spinach
- 1 cup young coconut flesh
- 1 banana
- 1 cup coconut water
- cinnamon and nutmeg to taste
Directions
- Add first 3 ingredients [to blender].
- Blend until smooth, adding water as necessary.
- Add remaining ingredients and blend until desired consistency.
Fresh young coconut is one of the most delicious healthy fats available. Mixed with sweet apples and protein-rich spinach, this is the closest you’ll get to eating something akin to Grandma’s apple pie without passing out after eating.
The banana is not optional in this one; it increases the potassium content of the spinach and adds a creamy pie-like texture that’ll have you coming back for more.
