Vanilla Maca Love (Recipe)

I tell anyone who inquires about this drink at my café that it is like drinking a cloud (a crazy delicious cloud). While none of us will ever truly know what that is like, it doesn’t take much imagination when drinking this to feel like this may be as close as you’ll ever get to that sensation.

Yield: 2 cups

Ingredients

  • 1½ cups milk of choice
  • 2 tsp vanilla extract
  • 1 tsp maca powder
  • 2 tbsp date paste (see below)
  • dash of cinnamon
  • several pieces of ice

Put all ingredients into a blender and blend until the ice is broken down. Sip up, and be careful not to float away!

Date Paste

  • 2 cups pitted deglet noor or medjool dates
  • Filtered water to cover

Cover the dates with filtered water and place them in the fridge, allowing them to soak for 8–12 hours or overnight. Blend the entire mixture into a smooth paste or leave as is and simply use the soaked dates anytime you’d use date paste (same amount). Date paste can be refrigerated in a sealed container for several weeks.
